Cooking and Quaffing Weekends in the South of France
Learn how to cook traditional dishes from the gastronomic region of
the Languedoc with top chef Pascal Ledroit whilst pairing them with
the wines of the region under the guidance of wine expert Emma
Kershaw.
Vinécole is a wine school situated just south of Carcassonne within
the impressive grounds of Domaine Gayda. Spend a weekend with
us learning how to cook, buy the ingredients like a professional
from a French market, and match the perfect wines to your meal.
Schedule:
Friday 4pm: Arrive at Carcassonne airport, guests will be picked up and dropped off at their accommodation.
6pm: Friday evening will consist of a tour of the winery and tasting from the barrel with Matthew Stubbs MW and Emma, followed by an aperitif and dinner at Maison Gayda.
Saturday
9am: Saturday morning after breakfast guests will be accompanied by Pascal to a local French market where he will explain how to choose the best ingredients for the dishes to be prepared later on.
11am: Return to Maison Gayda and start cooking lunch with Pascal.
12.30pm: Coffee break with pastries. 1.00pm: Wines of the Languedoc; learn about the incredible variety of the wines of the region and taste the wines chosen by Emma, to accompany the meal.
2.30 pm: Lunch. Guests will be able to sit and enjoy the dishes they prepared with the accompanying wines on the Gayda terrace overlooking the stunning views of the Pyrenean Mountains. Evening: Free to enjoy the area at leisure.
Sunday
10.00am: After breakfast guests will be taken to a top Blanquette de Limoux producer to learn about and taste the local sparkling wine that predates Champagne.
12.30pm: Visit to la cité Caracassonne.
1.30pm: Lunch at Comte Roger in the old city of Carcassonne.
4.00pm: Return to Carcassonne airport for flight back to the UK
