The Programme :

9:00 - 9:10 Introduction

9:15 - 10:30 Tour of vineyards, planting a vine, rootstocks, trellis v bush vine, canopy, yield, pests/diseases, sunlight/water/heat/nutrients, harvest

10:30 Coffee + Questions

11:00 - 12:00 Winemaking; reception, sorting, white, rosé red, destem v whole
bunch, maceration, fermentation, yeasts, temperature control, maturation, oak, blend, fining/filtration bottling

12:00 - 12:30 Harvest / Winemaking video

12:30 Lunch

14:00 Blending session. Explication of blending. Teams of 2/3 people.
Tasting and judgement of best blend.

15:00 - 15:15 Tea break (real English tea)

15:15 - 16:45 Tasting of 8 wines from around the Languedoc/Roussillon. Comparative tasting of Blends.

16:45 - 17:00 Q&A / Closing comments
