Wine Society Weekend in the Languedoc
Learn about this undiscovered, diverse and fascinating region at the
new centre of wine education Vinécole, with wine experts Matthew
Stubbs MW and Emma Kershaw.
Vinécole is a wine school situated just south of Carcassonne within
the impressive grounds of Domaine Gayda. Spend a weekend with
us learning about the different Appellations and Vins de Pays of the
area. Experience a day in the vineyard and winery and be a
winemaker for the day whilst you blend your own wine. Learn the
nuances of wine and food pairing, and enjoy the gastronomic
delights of Pascal Ledroit, Head Chef at Maison Gayda restaurant.
Schedule:
Friday
3.00pm: Arrive at Carcassonne airport, guests will be picked up and dropped off at their accommodation.
5.00pm: The evening will start with a talk on the differences between AOC and Vins de Pays of the region, and then follow with a Blind Tasting.
7.00pm: Aperitif and gastronomic dinner at Maison Gayda.
Saturday
8.00am: Breakfast
9.00am – 5pm: Spend the day learning how to become a ‘vigneron’, from viticulture to vinification to blending your own wine. See attached schedule.
7.00pm: Aperitif on the terrace.
7.30pm: Introduction on how to match wine and food.
8.00pm: Regional Wine and Food Pairing Dinner.
Sunday
10.00am: After breakfast guests will be taken to a top Blanquette de Limoux producer to learn about and taste the local sparkling wine that predates Champagne.
11.30am: Visit Domaine Begude, a top wine estate in the Languedoc with tour and tasting.
13.30pm: Lunch in la cite Carcassonne at the restaurant Auberge de Ducs D’Oc
4pm: Return to Carcassonne airport for flight back to the UK
