Christmas 2008 in the South of France

Get away from it all and enjoy the beauty and magnificence of this diverse region, whilst tasting the regional wines and sampling the local cuisine. Stay in luxury Gîtes accommodation, where you can relax indoors or walk amongst the vines, visit the area, buy produce from the markets and vineyards to enjoy ‘chez vous’ or dine ‘chez nous’ at Maison Gayda.

Vinécole is a wine school situated just south of Carcassonne within the impressive grounds of Domaine Gayda. Spend Christmas with us, shop in the fabulous Christmas markets, learn to cook regional dishes from Chef Pascal and discover the amazing diversity of the wines from the Languedoc-Roussillon with Matthew and Emma.

Itinerary:

Saturday 20th December

Arrive at Vinécole, late morning and relax.

2pm: Visit two local wineries, tour and tasting. 6pm: Saturday evening will consist of a tour of the Domaine Gayda winery and tasting from the barrel with Matthew Stubbs MW and Emma Kershaw, followed by an aperitif and dinner at Maison Gayda.

Sunday 21st December

Free to relax and enjoy the area at your leisure.

Monday 22nd December

9am: Monday morning after breakfast guests will be accompanied by Pascal to a local French market where he will explain how to choose the best ingredients for the dishes to be prepared later on.

11am: Return to Maison Gayda and start cooking lunch with Pascal.

12.30pm: Coffee break with pastries.

1.00pm: Learn how to partner wines with food and taste the wines chosen by Emma, to accompany the meal.

2.30 pm: Lunch. Guests will be able to sit and enjoy the dishes they prepared with the accompanying wines on the Gayda terrace overlooking the stunning views of the Pyrenean Mountains.

Evening: Free to enjoy the area at leisure.

Tuesday 23rd December

Morning: Walk around the Languedoc-Roussillon; a three hour tasting of eight wines with tapas, showing the incredible diversity of the region. An informal and informative session with your expert guides.

Afternoon and evening: Free.

Wednesday 24th December

Morning: Visit to ‘Les Halles’ the famous undercover Narbonne Market. Lunch in Narbonne.

Evening: Free, suggested firework display at Carcassonne

Thursday 25th December Christmas Day

Lunch at Maison Gayda. A gastronomic experience with accompanying wines.

Evening: Free.

Friday 26th December

Free to relax and enjoy the area at your leisure.
